Ingredients:
- 4 large potatoes, peeled and chopped into chunks
- 2 carrots, peeled and sliced
- 1 parsnip, peeled and sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced

Instructions:
- Preheat your oven to 400°F (200°C).
