I’ve been looking for a Pumpkin Soup Slow Cooker Recipe that incorporates cauliflower rather then white potato… couldn’t find one so decided to make up my own. Very very easy and cannot believe how yummy it is for such a simple soup...

Ingredients:
2kg Kent pumpkin
About half a cauliflower
1 Medium sweet potato
1 onion
1 carrot
1.5L vegetable stock – can use chicken if preferred
Method:
Dump into slow cooker – cooked on high for about 6-6.5hours
Cauliflower seemed to take that little extra
Blend till smooth.
I never add salt as preference, but add as much as you think is required.
