Keto chocolate peanut butter balls, For fans of peanut butter, these no-bake Keto Peanut Butter Balls are a simple and delectable low-carb treat.
Ingredients:
- ¾ cups coconut flour plus a little if batter if too thin
- 2 cups smooth natural peanut butter
- ½ cup peanuts smashed
- 1 cup dark chocolate melting wafers
- ½ tablespoon coconut oil
- 1 package Truvia sweetener divided
INSTRUCTIONS:
- Line a 9×13 baking sheet with parchment paper and set aside.
- Combine coconut flour, natural peanut butter, and smashed peanuts, and ¾ package Truvia in a medium bowl. The batter should be sticky, but not thin. If the batter is too thin then add ¼ additional cup of coconut flour.
- Place the peanut butter mixture in the refrigerator for 30 minutes.
- In a small bowl, combine dark chocolate, coconut oil, and a ¼ packet of Truvia sweetener. Place in microwave for 30 seconds. Stir, and return to microwave for an additional 30 seconds. Stir well.
- Take peanut butter mixture out of the refrigerator and roll into bite-size balls. Using a spoon, dip each ball in chocolate and then place on the parchment paper.
- Refrigerate balls until ready to eat.
