Directions:
Start with preheating the oven at 400 degrees F or 200 degrees C. Preheat your pizza pan or stone.
*Throw the washed cauliflower heads in a food processor and bliss it until you get a grainy or rice-like consistency. This is your cauliflower rice.
*In a pan at medium to low heat, stir fry these cauliflower rice for 10 to 12 minutes until it is soft.
*Set the cauliflower aside to cool down at room temperature and don’t cover it with a lid. You can use a clean kitchen towel to cover it instead.
*In a clean and dry bowl, crack a large egg and add in parmesan cheese along with garlic salt and Italian herbs or seasoning. Whisk the mixture together until the batter is smooth.
*Please take out the cooked cauliflower rice on a clean kitchen towel and press it over a bowl or sink to remove water from it.
*Now mix the drained cauliflower rice with the whisked eggs and parmesan cheese mixture. Knead it thoroughly until you get a good uniform dough.
*Spread the dough evenly on the parchment paper while trying to keep the dough’s thickness of about 0.25 inches.
*Lay the crust over the preheated pan or stone.
*Bake the crust for 20 to 25 minutes to the point when the edges of the dough turn golden, and the top is all firm, golden and dry.
*Take it out of the oven and let it sit at the room temperature for 5 to 10 minutes before adding your favorite toppings. This will give the crust firmness.
*Now top the crust with your favorite sauce, toppings, and cheese. Bake it for 5 to 10 minutes until the cheese is all melty and crusty.
*Your home-made cauliflower crusted pizza is now ready to serve and eat. How hot is that!
*Make sure you use blanched almond flour, not “almond meal/flour,” which is a lot less finely ground.
**I love the flavor of nutritional yeast, so I add it for both flavor and also to fortify the dough with vitamins (I buy Bragg’s brand).
***Wax paper does not work as well. The dough will stick. Be sure to use parchment.
