Ingredients:
560g boneless chicken thighs (diced into cubes)
1 onion (finely diced)
5-6 garlic cloves (grated)
1 thumb sized piece of ginger (grated)
Green chillies to taste (chopped)
200g chopped tomatoes
Salt pepper to taste
1 tbsp plain flour
1 tbsp garam masala
1 tbsp turmeric
1 tbsp paprika
5-6 tbsp natural yoghurt
Fresh coriander (chopped)
Vegetable oil
Instructions:
1)Add a few tablespoons of vegetable oil into a pan and allow to heat up for 1-2 minutes on a medium/high heat. Add in the onions and allow them to cook down for 2-3 minutes, add in the garlic and cook for another minute, add in the ginger and green chillies.
2)I browned the chicken then drained the juices (I only brown the chicken for this when using thighs but not breasts.) Place the chicken into the slow cooker pot and coat with the plain flour, pour in the ingredients from the pan and add in the garam masala, turmeric, paprika and salt/pepper to taste. Pour in the chopped tomatoes then give the ingredients a mix, cook on high for 2-3 hours or low for 4-5 hours (stir halfway through cooking) add in the fresh coriander and natural yoghurt a few minutes before serving!
