If you want a delicious, comforting food that just warms the soul; you will want to make Hearty Crockpot Cowboy Soup today. This is the perfect soup to prepare ahead or after a busy day, when you have so many other things to do and you just can’t think about dinner. Since you have to peel the potatoes and ground the beef, it’s not your typical dump and go crock pot dinner but, it’s only a few steps. Better yet, you only have to wash a skillet.  It can last a few days which makes it even better for leftovers for lunch or dinner.

My kids love sitting down to “cowboy” stew! They just love the name. Bean, potato and beef stew just doesn’t sound appealing to kids. But Hearty Crockpot Cowboy Soup is an excellent lunch even to throw into a thermos. I would serve it with warm croissants or cornbread and top with shredded cheese and sour cream.

If you want you can even add in some mild chili peppers, or green and red peppers to give it an extra kick. You can customize it to your liking. No matter what, it will definitely be something you will make again and again.

Ingredients:

2 Lbs Ground beef
4 Yukon Gold Potatoes
2 Cans Mixed vegetables undrained
1 Can Sweet corn undrained
1 Can Condensed tomato soup
1 Can diced tomatoes
1 Can Cut green beans undrained
Pinch Salt
Dash Pepper
2 Tablespoons Sugar

Instructions:

First you want to peel your potatoes and cut them into small cubes.

Brown and drain your ground beef. Easy peasy!

Take your potatoes and place them with the beef in your slow cooker.

Open all of your canned vegetables, diced tomatoes and can of tomato soup and add them to the slow cooker. I always suggest adding salt and pepper to taste!

Now here is the secret ingredient that really sets this recipe apart from your average soup – add sugar! You won’t regret it.

Mix it all together well. Let it simmer on low in your slow cooker for 2 – 3 hours.

Recipe Notes:

Of course you can substitute fresh or frozen veggies, but would need to add a can or two of beef stock to this. No need to add this if using canned veggies, as you will be adding the cans undrained-which provides both liquid and flavor.
