Farmer’s dish is a delicious breakfast casserole made from some simple “farm-friendly” ingredients. It calls for french fries, eggs, cheese, ham, green onions, and steamed milk. They are baked together to make a baked breakfast casserole.

Change things up by adding in a tablespoon of Dijon mustard, mixing in sauteed bell peppers and using a combination of cheeses.

Some of my readers have mentioned that they also enjoy making this for dinner.  Leftovers eaten the next day are delicious!

Ingredients:

  • 6 c diced potatoes (I used simply sliced ​​potatoes with onions)
  • 1 tablespoon of extra virgin olive oil
  • 1 1/2 low-fat Colby and Monterey cheese, grated
  •  6 Canadian bacon slices, diced
  • 2 green onions, sliced
  • Two cans (24 oz) of evaporated skim milk
  • 2 c egg replacer egg whisk (if you are using real eggs, it should be 8 eggs)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directione:

  1. Preheat the oven to 375 ° C.
  2. In a non-stick frying pan, heat the oil over a medium heat, then add the potatoes and leave until lightly browned.
  3. Add the cooked potatoes to the bottom of a casserole dish. Layer of ham, cheese, and green onions on top of the potatoes.
  4. In a large mixing bowl, combine egg beaters, steamed milk, salt and pepper and stir together.
  5. Pour the potato mixture with the egg mixture into a casserole dish.
  6. Bake until done, about 45 to 55 minutes, then remove from the oven and leave for about 10 minutes. Chop it into 15 equal portions. Serve immediately.

Notes

  • Add Tabasco for a bit of a kick.
  • Serve with a good dollop of sour cream.
