Ingredients:

  • 105g oats
  • 5g unsweetened cocoa powder
  • ¾ tsp baking powder
  • ⅛ tsp baking soda
  • ¼ tsp salt
  • ⅓ cup/80ml fat-free plain yogurt
  • 4 tbsp granulated sweetener
  • 1 large egg
  • 1 tsp pure vanilla extract

For the glaze:

  • 30g semisweet chocolate chips
  • 3 tsp chocolate sprinkles

Instructions:

  1. Preheat oven to 200°C/180°C fan/400°F (gas mark 6).
  2. In a mini blender or food processor, pulse oats until fine. Add to a bowl with cocoa powder, baking powder, baking soda, and salt. Mix well to combine.
  3. In a separate bowl, whisk together egg, yogurt, sweetener, and vanilla extract until smooth.
  4. Add the wet mixture to the oat mixture and stir until combined.
  5. Spoon the mixture into 9 holes of a doughnut tray. If your tray is not non-stick, grease with spray oil.
  6. Bake for 10 minutes, or until a skewer inserted into the center of a doughnut comes out clean.
  7. Allow doughnuts to cool slightly, then transfer to a rack.

For the glaze:

  1. melt the semisweet chocolate in a bowl by heating it at 10-second intervals, stirring after each interval until melted.
  2. Dip the top of each doughnut into the melted chocolate, then sprinkle with chocolate sprinkles.
  3. Enjoy!
