Ingredients:

  • 4 large potatoes, peeled and chopped into chunks
  • 2 carrots, peeled and sliced
  • 1 parsnip, peeled and sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, boil the potato chunks, carrot slices, and parsnip slices until they are just tender. This usually takes about 8-10 minutes. Drain the vegetables and let them cool for a few minutes.
  3. In a large mixing bowl, combine the boiled vegetables with the chopped onion and minced garlic.
