Ingredients: For the seitan:
- 1 1/2 cups vital wheat gluten
- 1/4 cup nutritional yeast
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 3/4 cup water
- 2 tablespoons tomato paste
For the BBQ sauce:
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 2 tablespoons molasses
- 1 tablespoon vegan Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, and salt.
- In a separate mixing bowl, whisk together the water and tomato paste until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Knead the dough for a few minutes until it’s smooth and elastic.
- Divide the dough into 4 equal pieces and shape them into chicken drumsticks.
- Place the drumsticks on a baking sheet lined with parchment paper.
- Bake for 20 minutes.
- While the seitan is baking, make the BBQ sauce. In a small saucepan, whisk together the ketchup, apple cider vinegar, molasses, vegan Worcestershire sauce, Dijon mustard, maple syrup, smoked paprika, garlic powder, salt, and pepper.
