A couple of weeks ago I began to think about the chicken salad that my grandma and my mom used to make. I don’t know what they did to make it so good, but they had the special touch when it came to chicken salad. My gut feeling is it wasn’t a low carb chicken salad!  Now my sister makes this yummy chicken salad grandma used to make!

Before I began eating keto, my chicken salad sandwich would include the freshest white bread possible, mayo, tomato and as much chicken salad as those two slices of bread could hold!  Grandma would keep dishing it out to me as fast as I could eat it!

It’s funny how different food recipes have such sentimental places in our heart.  Since I’m not even going to begin thinking about the delicious Kentucky Pound Cake my grandmother made me, I thought I’d try to come up with a keto friendly chicken salad that I could enjoy.

Makes 6 Servings
Nutritional Info: 224 Calories, 14.4 grams of fat, .3 net carbs, 21 protein, .2 grams of sugar.

Ingredients:

1.4 Pounds Cooked Chicken (I baked mine)
3 Stalks Celery
3 Teaspoons Red Onion
6 Tablespoons Mayo

Salt & Pepper to taste

How To Make No Carb Chicken Salad:

  1. Bake or cook chicken in crock pot.
  2. Once chicken has cooled, use scissors to cut up the chicken.
  3. Place chicken in mixing bowl.
  4. Add Celery, Red Onion and Mayo
  5. Add Salt & Pepper to taste
  6. Mix Well

Review Of Zero Carb Chicken Salad

This was REALLY good and so incredibly easy to prepare! I had never tried Trader Joe’s Mayo before, but for health sake, thought I would try it.  Duke’s Mayo (my favorite) doesn’t contain sugars or carbs either, so that’s an option for next time.

One of the recipe’s I based this off of called for more onion and chopped dill pickle, but I wanted to keep it basically no carb.  As you can see, there are .3 carbs per serving, so if you want to make it completely carb free, make it without the onion.

Also, the next time I make this I’ll probably slice up an additional stalk of celery.

Eating a low carb diet is a challenge because so many foods I enjoy contain carbs, making this post reminded me of how many carbs are in red onion – and I use a little onion here and a little onion there….and it adds up!

This is seriously a simple, but incredibly delicious chicken salad recipe.
